Sorullitos with Mojo Sauce

Story

When Don Luis was a little boy, his abuela used to make him sorullitos right after school. He’d come home with dust on his shoes, a backpack full of books, and a growling belly. As soon as he opened the door, the smell of fried cornmeal and sizzling garlic would hit him like a warm hug 🤗. Abuela would wink and say, *“Mijo, the sorullitos are singing in the oil!”* 🎶✨ These golden sticks of joy, crispy outside and cheesy in the middle, were always served with her famous mojo sauce—a garlicky lemon dip that made everything better. Today, Don Luis shares her secret recipe, passed down with love 💛.

Instructions

  1. 1Sorullitos:
  2. 2In a small pot, bring water, butter, salt, and sugar to a boil.
  3. 3Lower the heat and add the cornmeal slowly, stirring fast so it doesn’t clump! 🌀
  4. 4Once thick, turn off the heat and fold in the cheese until melted. Let cool for 5 minutes.
  5. 5With slightly wet hands, roll the dough into short cigar shapes about 3 inches long.
  6. 6Heat oil in a deep pan to medium-high. Fry 4–5 at a time for 3–4 minutes until golden brown 🟡.
  7. 7Place on paper towels to drain the oil.
  8. 8Mojo Sauce:
  9. 9In a small saucepan, gently heat olive oil. Add garlic and cook on low until fragrant (not brown!).
  10. 10Stir in lemon juice and salt. Let sit for a minute.
  11. 11Pour into a small bowl and serve warm or at room temp.
