Sorullitos con Mojo Sauce
Historia
When Don Luis was a little boy, his abuela used to make him sorullitos right after school. He’d come home con dust on his shoes, a backpack full de books, y a growling belly. As soon as he opened the door, the smell de fried cornmeal y sizzling ajo would hit him like a warm hug 🤗. Abuela would wink y say, *“Mijo, the sorullitos are singing in the oil!”* 🎶✨ These golden sticks de joy, crispy outside y cheesy in the middle, were always served con her famous mojo sauce—a garlicky limón dip that made everything better. Today, Don Luis shares her secret recipe, passed down con love 💛.
Instrucciones
- 1Sorullitos:
- 2In a pequeño pot, bring water, mantequilla, sal, y sugar to a boil.
- 3Lower the calienta y add the cornmeal slowly, stirring fast so it doesn’t clump! 🌀
- 4Once thick, turn off the calienta y fold in the queso until melted. Let cool para 5 minutes.
- 5con slightly wet hands, roll the dough into short cigar shapes about 3 inches long.
- 6calienta oil in a deep pan to mediano-high. Fry 4–5 at a time para 3–4 minutes until golden brown 🟡.
- 7Place on paper towels to drain the oil.
- 8Mojo Sauce:
- 9In a pequeño saucepan, gently calienta aceite de oliva. Add ajo y cocina on low until fragrant (not brown!).
- 10Stir in limón juice y sal. Let sit para a minute.
- 11Pour into a pequeño bowl y sirve warm o at room temp.
