There’s something about waking up to the sound of birds and the smell of sizzling longaniza that takes Don Luis back to his childhood in the campo. Every Sunday, his abuela would shout “¡A comer!” from the kitchen while flipping tostadas on the open flame.   2. 2In a skillet over medium heat, cook the crumbled longaniza for about 6–8 minutes until browned and crispy. Remove and set aside.

  4. 4In the same skillet, add a splash of olive oil and cook the chopped onion until soft and golden—about 2 minutes.
  5. 5Scramble the Eggs:
  6. 6Crack the eggs into the skillet with the onions. Add a pinch of salt and pepper. Scramble gently until just cooked through, about 2–3 minutes.
  7. 7Assemble the Tostadas:
  8. 8Lay out your tostadas. Top each one with a layer of the egg-onion mix, then spoon over the crispy longaniza.
