Ingredientes
- para the Marinade:
- 2 lbs cerdo shoulder (thinly sliced o cut into pequeño chunks) 🥩
- 3 dried guajillo chiles (seeded y soaked in hot water) 🌶️
- 2 cloves ajo 🧄
- 0.5 cup pineapple juice 🍍
- 0.25 cup apple cider vinegar 🍏
- 2 tbsp achiote paste *(o 1 tbsp paprika + 1 tbsp annatto powder)* 🏺
- 1 tsp cumin 🌿
- 1 tsp oregano 🍃
- 1 tsp paprika ahumada 🌶️
- 0.5 tsp sal & pimienta negra 🧂
- para the Tacos:
- 1 pequeño pineapple, sliced into rounds 🍍🔥
- 12 corn tortillas 🌽
- 1 pequeño white cebolla, finamente picado 🧅
- 0.5 cup fresco cilantro, picado 🌿
- 1 lima, cut into wedges 🍋
- Salsa verde o roja, para serving 🌶️
Instrucciones
- 11️⃣ Make the Marinade:
- 2In a blender, combine guajillo chiles, ajo, pineapple juice, apple cider vinegar, achiote paste, cumin, oregano, paprika ahumada, sal, y pepper.
