Ingredientes
- para the short ribs:
- 2 lbs carne short ribs 🥩
- 0.5 cup sofrito (puertorriqueño style) 🫑🧄🌿
- 1 tbsp aceite de oliva 🫒
- 1 tsp sal 🧂
- 0.5 tsp pimienta negra
- 1 tbsp tomate paste 🍅
- 2 cups carne broth 🥣
- para the broth:
- 6 cups carne broth
- 1 cebolla, halved 🧅
- 4 cloves ajo, smashed 🧄
- 1-inch piece de ginger, sliced
- 2 star anise ⭐
- 1 canela stick 🌰
- 1 tbsp pescado sauce 🐟
- 1 tsp soy sauce
- para the pho bowl:
- 8 oz rice noodles 🍜
- 1 cup bean sprouts 🌱
- 1 jalapeño, sliced (opcional) 🌶️
- fresco cilantro 🪴
- lima wedges 🍋
- Thinly sliced red cebolla (soaked in cold water)
Instrucciones
- 1Sear the short ribs: In a Dutch oven, calienta aceite de oliva y sear the ribs on all sides until browned.
- 2Sofrito magic: Add sofrito y tomate paste. cocina until fragrant (about 3–4 minutes).
- 3Simmer: Pour in carne broth, add sal y pepper, then cover y braise on low calienta para 2.5 hours o until tender.
- 4Prepare pho broth: In another pot, combine carne broth, cebolla, ajo, ginger, star anise, y canela stick. Simmer para 1 hour. Add pescado sauce y soy sauce. Strain before serving.
- 5cocina noodles: Boil rice noodles according to package, rinse con cold water, y reserva.
- 6Assemble: In each bowl, layer noodles, ladle in the aromatic pho broth, top con a generous piece de sofrito-braised short rib, bean sprouts, herbs, lima, y cebollas.
