Tostones con Pulled Cerdo
Historia
Don Luis still remembers the first time he made tostones para his grandson. He slow-cooked cerdo shoulder until it was tender y juicy, then paired it con those same tostones. Ingredientes
- para the Pulled cerdo:
- 2 lbs cerdo shoulder o cerdo butt
- 1 tbsp aceite de oliva 🫒
- 4 cloves ajo, minced 🧄
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp paprika ahumada 🌶️
- sal y pepper to taste 🧂
- 0.5 cup orange juice 🍊
- 0.25 cup lima juice 🍋
- 0.5 cup pollo broth
- para the Tostones:
- 3 plátanos verdes 🍌
- Vegetable oil para frying
- sal to taste
- opcional Toppings:
- ajo aioli o mayo-ketchup dip
- picado cilantro 🌿
- lima wedges 🍋
Instrucciones
- 1Make the Pulled cerdo:
- 2Rub the cerdo con aceite de oliva, ajo, cumin, oregano, paprika, sal, y pepper.
- 3In a Dutch oven o slow cooker, combine the cerdo con orange juice, lima juice, y pollo broth.
- 4cocina on low para 6–8 hours o in the oven at 300°F (150°C) para 3 hours, until fork-tender.
- 5Shred the cerdo using two forks y reserva.
- 6Make the Tostones:
- 7Peel the plátanos verdes y slice into 1-inch rounds.
- 8calienta oil in a pan over fuego medio. Fry the slices para about 2–3 minutes per side until lightly golden.
- 9Remove y flatten each piece using a tostonera o a flat-bottomed glass.
- 10Return flattened plátanos to the oil y fry until crispy y golden brown (about 2 more minutes per side).
- 11Drain on paper towels y sprinkle con sal.
- 12Assemble the Dish:
- 13Place 3–4 tostones on each plate.
- 14Top each one con a pequeño mound de pulled cerdo.
- 15termina con cilantro y a drizzle de ajo aioli o lima juice.
