Bacalaitos con a Side Salad
Historia

That sound was pure joy to young Don Luis—a sizzle that meant lunch was almost ready. 🐟🔥 Now in his rustic kitchen, wearing his signature jean-y-leather apron, Don Luis teaches the next generation that sometimes the simplest meals carry the richest stories. Today’s *bacalaitos*—golden, flat, y slightly chewy—are served con a fresco, crunchy salad tossed in lima juice. It’s the perfect combo: crispy meets crisp. 🌿✨
Ingredientes
- para the Bacalaitos 🐟
- 1 cup dried sal cod (bacalao), soaked overnight & shredded 🐠
- 1 cup all-purpose flour 🌾
- 1 tsp baking powder
- 1 ajo clove, finely minced 🧄
- 0.25 cup picado cilantro 🌿
- 0.25 tsp ground pimienta negra
- 0.25 tsp annatto o paprika (para color) 🌶️
- 1 1/4 cups water 💧 (adjust para thin batter)
- Oil para frying (vegetable o canola) 🛢️

- 2 cups picado romaine lettuce 🥬
- 0.5 cup cherry tomates, halved 🍅
- 0.25 red cebolla, thinly sliced 🧅
- 0.5 cucumber, thinly sliced 🥒
- Juice de 1 lima 🍋
- 1 tbsp aceite de oliva 🫒
- Pinch de sal y pepper 🧂
Instrucciones
- 1Soak the codfish overnight, changing the water 2–3 times to remove excess sal. Drain y shred finely.
- 2In a grande mixing bowl, combine flour, baking powder, minced ajo, pepper, cilantro, y paprika. Add shredded bacalao y stir well.
- 3Gradually add water, stirring to create a thin pancake-like batter. It should be pourable but not too watery.
- 4calienta oil in a frying pan over mediano-high calienta.
- 5Pour 2–3 tbsp de batter per bacalaíto into hot oil, flattening slightly. Fry until golden y crispy on both sides (about 2–3 minutes per side). Drain on paper towels.
- 6para the salad: toss all ingredients in a bowl, squeeze lima juice, drizzle aceite de oliva, y season to taste.
