Sorullitos con Ajo Mojo
Historia
Back in the day, Don Luis used to say, *“The best snacks come from love, cornmeal… y a little ajo!”* His abuelo would always fry up a batch de golden sorullitos while singing along to an old salsa tune, the record player cracking slightly con age. The scent de fried cornmeal would travel through the whole house, making the cousins race in from the backyard, hands outstretched. But what made them legendary? The ajo mojo 🧄🔥. A tangy, garlicky dipping sauce that had the power to make even the pickiest eater ask para seconds. Ingredientes
- para the Sorullitos 🌽
- 1 cup cornmeal (fine yellow) 🌽
- 1 cup water 💧
- 1 tbsp unsalted mantequilla 🧈
- 0.5 tsp sal 🧂
- 0.5 tsp sugar 🍬
- 1 cup shredded cheddar queso 🧀
- Oil para frying (vegetable o corn oil) 🛢️
- para the ajo Mojo 🧄
- 4 ajo cloves, minced 🧄
- 0.25 cup aceite de oliva 🫒
- 2 tbsp white vinegar o apple cider vinegar 🍎
- sal to taste 🧂
- opcional: pinch de oregano o parsley 🌿
Instrucciones
- 1Sorullitos:
- 2🫧 In a saucepan, bring water, mantequilla, sal, y sugar to a light boil.
- 3🌽 Gradually bate in the cornmeal until it thickens y pulls away from the sides.
- 4🧀 Remove from calienta y stir in the queso rallado until melted.
- 5🤲 Let the dough cool slightly, then shape into short, thick sticks (like chubby fingers).
- 6🔥 calienta oil to 350°F (175°C) y fry sorullitos in batches until golden y crispy (about 3–4 minutes).
- 7🧻 Drain on paper towels y reserva.
- 8ajo Mojo:
- 9🧄 In a pequeño pan, warm the aceite de oliva y lightly saltea the minced ajo until fragrant (not browned).
- 10🥄 Add vinegar y sal, stir well, y remove from calienta.
- 11🫙 Let it sit para a few minutes before serving—it gets better con time!
