Sorullitos with Garlic Mojo
Story
Back in the day, Don Luis used to say, *“The best snacks come from love, cornmeal… and a little garlic!”* His abuelo would always fry up a batch of golden sorullitos while singing along to an old salsa tune, the record player cracking slightly with age. The scent of fried cornmeal would travel through the whole house, making the cousins race in from the backyard, hands outstretched. But what made them legendary? The garlic mojo 🧄🔥. A tangy, garlicky dipping sauce that had the power to make even the pickiest eater ask for seconds. Ingredients
- For the Sorullitos 🌽
- 1 cup cornmeal (fine yellow) 🌽
- 1 cup water 💧
- 1 tbsp unsalted butter 🧈
- 0.5 tsp salt 🧂
- 0.5 tsp sugar 🍬
- 1 cup shredded cheddar cheese 🧀
- Oil for frying (vegetable or corn oil) 🛢️
- For the Garlic Mojo 🧄
- 4 garlic cloves, minced 🧄
- 0.25 cup olive oil 🫒
- 2 tbsp white vinegar or apple cider vinegar 🍎
- Salt to taste 🧂
- Optional: pinch of oregano or parsley 🌿
Instructions
- 1Sorullitos:
- 2🫧 In a saucepan, bring water, butter, salt, and sugar to a light boil.
- 3🌽 Gradually whisk in the cornmeal until it thickens and pulls away from the sides.
- 4🧀 Remove from heat and stir in the shredded cheese until melted.
- 5🤲 Let the dough cool slightly, then shape into short, thick sticks (like chubby fingers).
- 6🔥 Heat oil to 350°F (175°C) and fry sorullitos in batches until golden and crispy (about 3–4 minutes).
- 7🧻 Drain on paper towels and set aside.
- 8Garlic Mojo:
- 9🧄 In a small pan, warm the olive oil and lightly sauté the minced garlic until fragrant (not browned).
- 10🥄 Add vinegar and salt, stir well, and remove from heat.
- 11🫙 Let it sit for a few minutes before serving—it gets better with time!
