The sizzle of the oil, the cheesy filling, and the soft crunch at every bite still bring back warm memories. Ingredients

  • For the Sorullitos:
  • 2 cups water 💧
  • 1 cup yellow cornmeal 🌽
  • 1 cup all-purpose flour 🥣
  • 1 tsp salt 🧂
  • 1 tbsp sugar 🍬
  • 1 tbsp butter 🧈
  • 1 ½ cups shredded cheddar cheese 🧀 (or mix with mozzarella for extra stretch)
  • Oil for frying 🛢️ (vegetable or canola)
  • For the Dipping Sauce:
  • 0.5 cup mayonnaise 🍶
  • 0.25 cup ketchup 🍅
  • 1 tsp garlic powder 🧄
  • Optional: splash of vinegar or a pinch of adobo for flair ✨

Instructions

  1. 1Boil & Mix:
  2. 2In a saucepan, bring water, butter, sugar, and salt to a gentle boil. Lower heat and gradually whisk in the cornmeal and flour, stirring constantly until a soft dough forms and pulls from the sides. Turn off heat.

  4. 4Add in the shredded cheese and mix until fully combined and melty. Let the dough cool slightly—enough to handle.
  5. 5Shape the Fritters:
  6. 6Take a tablespoon of dough, roll into short cigar-like shapes (about 3 inches long). You can flatten them slightly for more crunch.
  7. 7Fry It Up:
  8. 8Heat oil in a deep pan (about 350°F/175°C). Fry 4–5 at a time until golden and crispy (about 3 minutes per batch). Drain on paper towels.

  10. 10Mix mayo, ketchup, garlic powder, and any extras you like in a small bowl. Stir until smooth and creamy.
