Ingredients

  • For the Sorullitos:
  • 1 cup cornmeal (fine yellow) 🌽
  • 1 cup water 💧
  • 0.5 tsp salt 🧂
  • 1 tbsp sugar 🍬
  • 1 tbsp butter 🧈
  • 0.5 cup shredded cheddar cheese 🧀
  • Oil for frying (canola or vegetable) 🛢️
  • For the Cilantro Lime Sauce:
  • 0.5 cup mayonnaise 🥄
  • 0.5 cup sour cream or Greek yogurt 🥛
  • 0.25 cup fresh cilantro (chopped) 🌿
  • Juice of 1 lime 🍋
  • 1 garlic clove (minced) 🧄
  • Salt and pepper to taste 🧂

Instructions

  1. 1Sorullitos:
  2. 2In a small saucepan, bring water, salt, sugar, and butter to a light boil.
  3. 3Reduce heat to low and slowly whisk in the cornmeal until thick.
  4. 4Fold in shredded cheese until melted. Remove from heat.
  5. 5Let the dough cool slightly, then shape into short cigar-shaped sticks.
  6. 6Heat oil in a skillet to medium-high. Fry sorullitos in batches until golden brown (about 3–4 mins).
  7. 7Place on paper towels to drain excess oil.
  8. 8Cilantro Lime Sauce:
  9. 9In a small bowl, combine mayo, sour cream, cilantro, lime juice, and garlic.
  10. 10Mix well until smooth. Season with salt and pepper to taste.
  11. 11Chill in the fridge for 10 minutes before serving (optional but recommended).
