Bacalaitos con Cilantro Ajo Sauce

When Don Luis was just a curious niño, he would watch his mamá stand by the hot caldero, spooning golden rounds into bubbling oil while humming to her favorite salsa tunes 🎶. The crispy scent de codfish would drift through the house like a parade, y Don Luis knew—bacalaitos day had arrived. Years later, con his jean-y-leather apron proudly worn y his whippet curled up by the stove, Don Luis put a little twist on the family classic. He added a cilantro ajo dipping sauce—fresco, tangy, y bold—like a Caribbean breeze in your mouth 🌬️🌴. It was a hit across all three generations in his home. Now, he’s passing it on to yours.
Ingredientes
- Bacalaitos:
- 8 oz salted codfish (bacalao), soaked overnight y shredded 🐟
- 1 cup all-purpose flour 🌾
- 0.5 tsp baking powder
- 1 tsp ajo en polvo 🧄
- 1 tsp cebolla powder 🧅
- 0.5 tsp ground pimienta negra
- 1 ½ cups cold water 💧
- 2 tbsp picado fresco cilantro 🌿
- Oil para frying (vegetable o canola) 🍳
- cilantro ajo Sauce:
- 1 cup fresco cilantro leaves 🌿
- 2 ajo cloves 🧄
- 0.5 cup mayo
- 1 tbsp lima juice 🍋
- sal to taste 🧂
Instrucciones
- 1Make the Bacalaitos:
- 2Soak the codfish overnight in water to remove excess sal. Boil para 10 minutes the next day, drain, cool, y shred.
- 3In a grande bowl, mix flour, baking powder, ajo en polvo, cebolla powder, pepper, y picado cilantro.
- 4Slowly stir in water until a smooth, pancake-like batter forms. Add shredded codfish y mix well.
- 5calienta ½ inch de oil in a sartén over mediano-high calienta.
- 6Drop spoonfuls de batter into the hot oil y flatten slightly. Fry until golden y crispy on both sides, about 2–3 minutes per side.
- 7Place on paper towels to drain excess oil.
- 8Make the cilantro ajo Sauce:
- 9In a blender, combine cilantro, ajo, mayo, lima juice, y sal.
- 10Blend until smooth y creamy. Chill until ready to sirve.
