Ingredients
- For the Ropa Vieja:
- 2 lbs flank steak 🥩
- 4 cups beef broth
- 2 tbsp olive oil
- 0.5 onion, sliced 🧅
- 0.5 bell pepper, sliced 🌶️
- 3 cloves garlic, minced 🧄
- 1 tbsp sofrito
- 1 cup tomato sauce 🍅
- 0.5 cup crushed tomatoes
- 1 tbsp tomato paste
- 0.5 cup green olives, sliced 🫒
- 0.5 tsp cumin
- 0.5 tsp paprika
- 0.5 tsp oregano
- 0.5 tsp black pepper
- 0.5 tsp salt
- 1 bay leaf
- 2 tbsp fresh cilantro, chopped 🌿
- For the Roasted Vegetables:
- 1 zucchini, sliced 🥒
- 1 red bell pepper, sliced 🌶️
- 0.5 red onion, sliced 🧅
- 2 carrots, sliced 🥕
- 1 tbsp olive oil
- 0.5 tsp garlic powder
- 0.5 tsp salt
- 0.5 tsp black pepper
Instructions
- 11️⃣ Cook the Flank Steak
- 2Place flank steak in a large pot with beef broth and bay leaf.
- 3Bring to a boil, then reduce to a simmer and cook for 2 hours, until tender.
- 4Remove the meat, shred with two forks, and set aside.
- 52️⃣ Build the Ropa Vieja Sauce
- 6In a large pan, heat olive oil over medium heat.
- 7Sauté onions, bell peppers, and garlic for 3 minutes.
- 8Stir in sofrito, tomato sauce, crushed tomatoes, tomato paste, cumin, paprika, oregano, black pepper, and salt.
- 9Add shredded beef and mix well. Let simmer for 10 minutes.
- 10Stir in green olives and fresh cilantro before serving.

- 12Preheat oven to 400°F (200°C).
- 13Toss zucchini, bell pepper, onion, and carrots with olive oil, garlic powder, salt, and black pepper.
- 14Spread on a baking sheet and roast for 15-18 minutes until golden brown.
