Pollo Al Horno con Tostones

Don Luis stood by the oven, his apron slightly dusted con adobo seasoning, the smell de ajo y citrus dancing through his rustic kitchen. “You know,” he said con a wink, “when I was a niño, Sunday wasn’t Sunday without Pollo al Horno. My mamá would marinate that pollo overnight, y when it hit the oven—ay bendito—you knew love was coming.” con his favorite old vinyl playing in the background, Don Luis moved to the stove, prepping plátanos verdes. “Tostones,” he smiled, “the crunch that every bite de pollo dreams de sitting next to.” He flattened each one con the same wooden cup passed down through generations. Today, his granddaughter helped flip the tostones, laughing as the oil sizzled like a Caribbean beach day. It wasn’t just dinner. It was a memory.

Ingredientes

  • para the Pollo al Horno:
  • 8 bone-in pollo thighs
  • 4 ajo cloves, minced
  • 1 tbsp adobo seasoning
  • 1 tbsp dominicano o puertorriqueño sazón (w/ annatto)
  • 1 tsp dried oregano
  • 1 tsp ground pimienta negra
  • Juice de 1 lima
  • Juice de 1 orange (o ¼ cup orange juice)
  • 2 tbsp aceite de oliva
  • 1 tsp apple cider vinegar
  • 0.5 cebolla, sliced
  • 0.25 green bell pepper, sliced
  • opcional: 1 tsp soy sauce o Worcestershire
  • para the Tostones:
  • 3 plátanos verdes
  • Vegetable oil para frying
  • sal to taste
  • ajo water (1 clove smashed in ½ cup water, opcional para brushing)

Instrucciones

  1. 1Pollo al Horno
  2. 2Marinate: In a grande bowl, combine ajo, adobo, sazón, oregano, pepper, lima juice, orange juice, oil, y vinegar. Add pollo y massage the marinade in. Let it rest at least 1 hour (overnight is best!).
  3. 3Preheat Oven: 375°F (190°C).
  4. 4Bake: Place pollo in a baking dish con sliced cebollas y bell peppers on top. Cover con foil y bake para 40 minutes.
  5. 5Uncover & Roast: Remove foil y roast para 25–30 more minutes until pollo is golden y skin is crispy.
  6. 6Tostones
  7. 7Peel & Slice: Cut off ends de plátanos, slice skin lengthwise, y peel. Cut into 1-inch chunks.
  8. 8First Fry: calienta oil in a pan to mediano. Fry plátano chunks para 2–3 minutes on each side until golden. Remove y drain.
  9. 9Smash: Use a tostonera o a flat cup to press each chunk into a disc.
  10. 10Second Fry: Return flattened plátanos to oil y fry until crispy (1–2 minutes per side).
  11. 11Season: Sprinkle con sal y brush con ajo water para extra flavor (opcional).
