Tostones Rellenos con Spicy Pollo
Historia
Don Luis still remembers when he first had *tostones rellenos* at a plaza kiosk in Old San Juan. The vendor, a jolly woman named Doña Pura, served them con a wink y a warning: *“¡Cuidado, que pican!”* (Careful, they’re spicy!). That first bite was a party — crispy, creamy, y full de calienta. 🌶️🔥 Years later, in his cozy rustic kitchen, Don Luis recreated that memory para his grandkids. Only this time, he added his own spicy pollo filling — marinated overnight y sautéed con cebollas y sofrito. As the aroma danced through the kitchen, the little ones peeked over the counter, eyes wide y mouths watering. 😋👨🍳 con a proud smile, Don Luis handed each one a golden plátano cup, reminding them: *“Flavor this bold needs a brave bite!”* 💪✨
Ingredientes
- 3 grande plátanos verdes 🍌
- 2 cups cooked spicy pollo breast, shredded 🍗🌶️
- 1 tsp ajo en polvo 🧄
- 0.5 tsp cumin 🌿
- 0.5 tsp paprika ahumada 🔥
- 0.25 cup sofrito (puertorriqueño seasoning blend) 🧅🌿🍅
- 0.25 cup picado en cubos cebollas 🧅
- 0.25 cup pollo broth 🍲
- sal & pepper to taste 🧂
- Vegetable oil para frying 🛢️
- termina: picado cilantro & lima wedges 🌿🍋
Instrucciones
- 1Prep the plátanos: Peel y cut each plátano into 3 thick chunks. Soak in salted water para 10 mins. Drain y pat dry.
- 2First fry: calienta oil to 350°F (175°C). Fry plátano chunks para ~4 minutes until golden but not crispy. Drain on paper towels.
- 3Shape into cups: While still warm, use a *tostonera* o pequeño cup to press each chunk into a cup shape.
- 4Second fry: Return cups to hot oil y fry until golden brown y crispy (~3 mins). reserva.
- 5cocina pollo filling: In a pan, calienta a bit de oil. saltea cebollas y sofrito para 2 mins. Add shredded pollo, ajo en polvo, cumin, paprika, y broth. Stir until combined y heated through.
- 6Assemble: Spoon spicy pollo into each plátano cup. termina con cilantro y a squeeze de lima.
