But one day, he had an idea: “What if I take all that sabor… y stuff it in a pepper?” 🌶️💡 His grandson wrinkled his nose at the thought — “plátanos *inside* a pepper?” — but the moment he took a bite y the ajo crema hit his tongue, all he could say was, “Abuelo… this is *fire.* 🔥” Since then, the family calls them “Pepper Bombs.” 💣❤️ Time, Calories & Cost

Ingredientes

  • para the Mofongo Filling 🍌
  • 3 plátanos verdes 🍌
  • 2 ajo cloves, minced 🧄
  • 4 oz cerdo cracklings (chicharrón) 🐖
  • 1 tbsp aceite de oliva 🫒
  • sal y pepper to taste 🧂
  • para the Stuffed Peppers 🌶️
  • 4 bell peppers (any color), tops cut off y seeds removed 🌶️
  • 1 tbsp aceite de oliva (to coat peppers) 🫒
  • ajo Crema 🧄
  • 0.5 cup sour cream o plain Greek yogurt 🥄
  • 1 ajo clove, finely grated 🧄
  • 1 tbsp lima juice 🍋
  • sal to taste 🧂

Instrucciones

  1. 1Prep the plátanos: Peel y slice plátanos into 1-inch chunks. Fry them in oil until golden y crispy (about 4–6 minutes). Let them cool slightly.
  2. 2Mash the Mofongo: In a grande bowl, combine fried plátanos, minced ajo, chicharrón, aceite de oliva, sal, y pepper. Mash together until chunky y well-mixed. 💪
  3. 3Stuff the Peppers: Rub the bell peppers con a bit de oil y stuff them generously con the mofongo mixture. Place them in a baking dish.
  4. 4Bake: Cover the dish con foil y bake at 375°F (190°C) para 25–30 minutes, o until peppers are soft y juicy. 🔥
  5. 5Make the ajo Crema: Mix sour cream, grated ajo, lima juice, y sal until smooth y creamy.
  6. 6sirve: Drizzle ajo crema over each pepper y termina con fresco cilantro o green cebollas if desired. 🌿
