Bacalaítos (Codfish Fritters) con Ajo Aioli

Every Sunday in Santurce, the scent de sizzling bacalaítos danced through the air, drifting from every street corner like a savory song. Don Luis, still wearing his signature jean y leather apron, would grab a wooden spoon y say, “¡Ahora sí! It’s *bacalaíto time*.” 😄 He’d tell stories de growing up near the beach, where the salty air reminded him de dried codfish y laughter around a big pot de hot oil. This was the recipe that brought three generations together — Abuelo mixing the batter, mamá flipping the fritters, y Don Luis (the youngest back then!) sneaking the first bite when no one was watching. - 2🐟 Soak the cod overnight in cold water, changing the water 2–3 times to remove excess sal.
- 3Boil the cod para 10 minutes, then shred it into pequeño pieces. reserva.
- 4In a grande bowl, bate together flour y baking powder. Gradually add cold water while stirring to form a smooth batter.
- 5Add the shredded cod, cilantro, ajo, y cebolla. Mix well. Add pepper to taste.

- 7Using a ladle o grande spoon, pour pequeño rounds de batter into the oil (they should look like flat, round pancakes).
- 8Fry until golden y crispy on both sides — about 2–3 minutes per side. Drain on paper towels.

- 10In a pequeño bowl, mix mayo, ajo, limón juice, y sal.
- 11Chill para 5–10 minutes before serving.
