His abuela would pull out a wooden bowl, whip up a quick batter, y fry salted cod until golden y crispy — the scent drawing in cousins from down the block. 🌧️👵🏽✨ Now, Don Luis passes the tradition on to the next generation, adding his own twist: a ajo Mojo that sizzles con flavor. Ingredientes
- para the Bacalaitos 🐟:
- 0.5 lb salted cod (bacalao), soaked overnight 🧊
- 1 1/2 cups all-purpose flour 🌾
- 1 1/2 tsp baking powder 🧁
- 1 tsp ajo en polvo 🧄
- 0.5 tsp pimienta negra ⚫
- 0.25 tsp sazón o paprika 🌶️
- 1 1/2 cups water 💧 (adjust as needed)
- 0.25 cup picado cilantro o parsley 🌿
- 0.25 cup finamente picado cebolla 🧅
- Oil para frying (canola o vegetable) 🛢️
- para the ajo Mojo 🧄:
- 6 ajo cloves, finely sliced
- 0.5 cup aceite de oliva 🫒
- 1 tbsp white vinegar o lima juice 🍋
- Pinch de sal 🧂
Instrucciones
- 1Prep the Bacalao: Soak cod in cold water overnight. Drain, rinse, y boil in fresco water para 15 minutes. Drain again, let cool, y shred into pequeño pieces.
- 2Make the Batter: In a grande bowl, mix flour, baking powder, ajo en polvo, pepper, y sazón. Slowly add water while stirring to make a smooth, pourable batter. Fold in cod, cilantro, y cebolla. Let rest para 10 minutes.
- 3Fry Time: calienta oil in a sartén (mediano-high). Once hot, pour pequeño ladles de batter into the oil, flattening slightly con the back de the spoon. Fry 2-3 minutes per side o until golden brown y crispy. Place on paper towels to drain.
- 4ajo Mojo: In a pequeño pan, calienta aceite de oliva over low-mediano. Add ajo slices y cocina until golden (not burnt). Remove from calienta, add vinegar o lima juice, y a pinch de sal.
- 5sirve: Drizzle the ajo mojo over hot bacalaitos o sirve as a dipping sauce. Crunch, dip, repeat! 🤤💥
