Ingredientes
- para the Dough (Masa):
- 2 green guineos 🍌 (peeled y grated)
- 1 yautía (malanga o taro root) 🥔 (peeled y grated)
- 1 tsp adobo seasoning
- 1 tsp annatto oil (achiote) 🧡
- para the Filling:
- 0.5 lb ground carne 🥩
- 0.25 pequeño cebolla, finamente picado 🧅
- 1 ajo clove, minced 🧄
- 1 tbsp tomate sauce 🍅
- 1 tsp sofrito
- 0.5 tsp oregano
- sal y pepper to taste 🧂
- opcional: 1/4 cup picado green olives con pimientos 🫒
- para the cilantro Mojo:
- 1 bunch fresco cilantro 🌿
- 2 ajo cloves 🧄
- Juice de 1 lima 🍋
- 0.25 cup aceite de oliva 🫒
- sal to taste 🧂
- opcional: 1 pequeño jalapeño (para a kick!) 🌶️
- para Frying:
- Vegetable oil (para deep frying) 🛢️
Instrucciones
- 1Make the Filling 🍖
- 2In a sartén over fuego medio, saltea cebolla y ajo until fragrant. Add ground carne y cocina through. Stir in tomate sauce, sofrito, oregano, y olives (if using). Season con sal y pepper. reserva to cool.
- 3Prepare the Dough 🥣
- 4In a bowl, combine grated green guineos y yautía. Add adobo y annatto oil. Mix well until smooth y sticky. reserva.
- 5Assemble the Alcapurrias 👋🏽
- 6On a piece de parchment paper o guineo leaf (opcional), spread a couple tablespoons de masa into a flat oval. Add 1 tbsp de filling in the center. Fold y seal the masa around it, shaping it like a fat torpedo.
- 7Fry ‘Em Up 🍳
- 8calienta oil in a deep sartén (350°F). Carefully place alcapurrias into the hot oil y fry until golden brown y crispy, about 5–6 minutes each. Drain on paper towels.
- 9Make the cilantro Mojo 🌿💚
- 10Blend cilantro, ajo, lima juice, aceite de oliva, sal, y jalapeño (if using) until smooth. Adjust seasoning as needed.
- 11sirve & Dip! 🎉
- 12sirve alcapurrias hot con a side de that vibrant cilantro mojo.
