Cuban Black Bean and Avocado Salad
Story
On hot afternoons, Don Luis would skip the stove and pull out a bowl, a can of black beans, and a perfectly ripe avocado. *“Comida fresca con sazón,”* he’d say, chopping up veggies with rhythm and ease. The black beans soaked in a limey mojo dressing, while the avocado brought that silky, buttery vibe to every bite. Ingredients
- For the Salad
- 1 (15 oz) can black beans, drained and rinsed 🫘
- 1 ripe avocado, diced 🥑
- 0.25 red onion, finely chopped
- 0.5 red bell pepper, diced
- 1 small cucumber, diced
- 2 tbsp fresh cilantro, chopped 🌿
- For the Mojo Dressing
- 2 tbsp olive oil 🫒
- Juice of 2 limes 🍋
- 1 garlic clove, minced 🧄
- 0.5 tsp oregano
- Salt & pepper to taste
Instructions
- 1Make the Mojo Dressing:
- 2Whisk together olive oil, lime juice, garlic, oregano, salt, and pepper in a small bowl.
- 3Assemble the Salad:
- 4In a large bowl, combine black beans, avocado, onion, bell pepper, cucumber, and cilantro.
- 5Pour the mojo dressing over the top and gently toss until combined.
- 6Let sit for 10 minutes to let the flavors come together.

- 8Enjoy chilled or at room temperature. Great with tostones, crackers, or over a bed of greens.
