Argentinian Choripán (Chorizo Sandwich)
Story
Don Luis remembers the first time he bit into a Choripán on the streets of Buenos Aires. The smoky smell of grilled chorizo filled the air as vendors lined the cobblestone roads near La Bombonera stadium. A young boy had just offered Don Luis half of his sandwich — toasted bread with spicy chimichurri dripping onto his fingers. “No hay nada más sabroso,” the boy said, smiling. Years later, Don Luis recreates that magical bite in his kitchen, wearing his signature jean and leather apron. As the chorizo sizzles and the chimichurri chills, he nods and says, *“This sandwich has soul, mijo.”*
Ingredients
- 4 Argentinian-style chorizo sausages 🌭
- 4 crusty baguette-style rolls 🥖
- 0.5 cup chimichurri sauce (store-bought or homemade) 🌿🧄
- Optional: grilled red peppers or onions 🫑🧅
- Homemade Chimichurri (optional):
- 1 cup fresh parsley 🌿
- 4 garlic cloves 🧄
- 2 tbsp red wine vinegar 🍷
- 0.5 cup olive oil 🫒
- 1 tsp oregano 🌿
- Salt & pepper to taste 🧂
Instructions
- 1🔥 Grill the chorizo: Heat up your grill or skillet over medium-high heat. Grill the sausages for 10–12 minutes, turning often, until fully cooked and nicely charred.
- 2🥖 Toast the rolls: Cut the bread rolls lengthwise, and toast them lightly on the grill or in a toaster for a crunchy texture.
- 3🌿 Make the chimichurri (if homemade): Blend all chimichurri ingredients together in a food processor until chunky but combined.
- 4🧴 Assemble the choripán: Place each chorizo in the toasted bread, spoon a generous amount of chimichurri over the top, and add optional grilled veggies if desired.
- 5🤤 Serve immediately with a napkin… you’re gonna need it!
