The tripleta is uniquely Puerto Rican, a giant sandwich with three meats (classically pernil, ham, and churrasco, though chicken or steak variants exist) served on pan sobao with cheese, lettuce, tomato, French fries inside, and the unmistakable pink mayo-ketchup sauce. This isn’t a cafeteria sandwich: it’s food truck food, late-night bar food, the post-beach 2am sandwich.
Don Luis documents the variants that every PR lechonera and food truck makes differently. The recipes here are written to reproduce the experience at home, including the pan sobao trick that toasts without falling apart, and the exact mayo-ketchup ratio that separates an authentic tripleta from an imitation.
